Rocchetta is a little village in the Piemonte region of Italy. The traditional recipe for this cheese is held by the regional farms that specialise in making mixed milk cheese, combining the qualities of goat, sheep and cow’s milk into a harmonious balance of flavours.
Rocchetta is a very approachable cheese of exquisite quality. It has a straw coloured interior with a smooth dense texture. It has a wrinkled pale yellow rind which blooms with white grey moulds.
A young Rocchetta has a fresh, milky flavour with a pleasant citrus tang. With age Rocchetta will develop a more complex flavour spectrum.
The dairy is located in the Alta Langa Bosia, halfway between Alba and Cortemilia, and takes its name from Alta Langa Piemontese, area for the most part still green, famous for its wine and cheese.
