Roquefort is France’s most renowned blue cheese. The legend of its discovery tells of a shepherd who left his bread and milk in a cave and on his return discovered the very first blue mould cheese. Under current regulations, all Roquefort cheese has to spend three months in these caves. Hervé Mons selects the best Roquefort to be delivered to his cheese maturing tunnel near the little village of Renaison in the Auvergne region, where it is carefully guided to maturity. They are released for sale when they have reached their peak flavour and texture. The balance of the blue mould with the sweetness from the milk and just the right amount of saltiness results in a clean and complete mouth full of flavour.
About Hervé Mons Fromager Affineur
In 1964, Hubert Mons and his wife decided to sell cheese on the markets in and around Roanne. In 1983, Hervé, the eldest son, set up the first shopfront in the Roanne city center. Other shops followed along with the maturing cellars in Saint-Haon-le-Châtel. In the 90s, his brother Laurent joined him. A few years ago, the company became international and is now trading all over the world.
