Cow's and Goat's Milk

Produced in the mountainous Northwest region of Leon, Valdeón is a mixed milk cheese. A little goat’s milk is added to a dominant amount of cow’s milk to create a unique balance. Maturation takes place in high humidity mountain caves for 3-4 months in order for the blue mould to proliferate. When almost mature, the cheese has developed a thin natural rind which is then wrapped in sycamore maple leaves to hold the body together and retain the moisture. The texture is rich, crumbly and slightly gritty. The ivory coloured interior is riddled with blue and green veins which give the cheese a pronounced, piquant and long lasting flavour.
