Section28 is a small Artisan producer of high quality, handcrafted Alpine style cheeses that reflect the terroir of the Adelaide Hills. After spending time in France and Italy learning the craft of cheesemaking, Kym Masters returned to set up Section28, where he is hand-making uniquely Australian cheeses that reference European heritage and cheese making traditions while having a style and flavour that is distinctly their own and represents the Adelaide Hills. This raw milk Fontina is inspired by the Alpine cheese of Northern Italy's Valle d'Aosta, Kym washes it weekly as it matures in his cave for a minimum of 4 months. The result is a supple interior with small holes dotted throughout, the flavour is rich and buttery and aroma distinctively aromatic.
