Kym Masters from Section 28 in the Adelaide Hills, is hand-making uniquely Australian cheese that acknowledges the terroir via the local milk. The third cheese in the range of this new cheese maker is Il Lupo - The Wolf in Italian. It is his tribute to the orchardists of the Adelaide Hills. Kym bathes the young cheese in the fabulous LOBO cider that is made just down the road. The result is a cheese with a yeasty aroma and hints of cider. The texture of the interior is supple and smooth inside a sticky, cider-soaked rind. Kym says it tastes of Adelaide Hills’ sunshine.
